Meet the Chef

Blair Fornshell

Bringing the heart of fine pastry to the table, Blair grew up cooking and gardening alongside her grandmother, Edna Marcile Bailey. Those early lessons in seasonal ingredients and hands-on baking laid the foundation for a career shaped by passion, perseverance, and a love for bringing people together through food.

What began as a small dream in her basement became Brown Bear Bakery, where she made her first market sales in December 2012. The bakery quickly gained a devoted following, leading to the opening of her brick-and-mortar location in Over-the-Rhine in 2017. When the world slowed down, Blair once again embraced new possibilities, launching 272, a second bakery concept in Clifton’s Gaslight District in 2022.

With deep roots in Cincinnati’s bakery scene, Blair’s journey has always been about honoring seasonal ingredients, time-honored techniques, and the experience of sharing something truly special. Now, she brings that same intention to Sonna Mae Heritage’s Brunch Series, crafting menus that celebrate the farm, the season, and the joy of gathering around the table.
